Ingredients
1lbsground beef
1tbspolive oil
2clovesgarlic, minced
1mediumred onion, sliced
1mediumzucchini, diced
1/4cupmushrooms
1red bell pepper, diced
1tspdried oregano
1tbspbalsamic vinegar
Salt and freshly ground black pepper, to taste
1/4cupfeta cheese, crumbled
1sprigrosemary
Instructions
Heat olive oil in a large pan over medium-high heat. Add the ground beef and cook until it starts to brown, breaking it up as it cooks. Add the garlic and cook briefly until fragrant.
Add the red onion, zucchini, mushrooms, and bell pepper. Cook everything together until the vegetables soften but still keep a bit of texture.
Season with dried oregano, salt, and pepper. Pour in the balsamic vinegar and let it reduce slightly so it coats the beef and vegetables.
Lower the heat and let the mixture simmer for a few minutes so the flavors come together.
Remove from heat, crumble feta over the top, and serve warm.
