Ingredients

  • 1 lbs ground beef
  • 1 tbsp olive oil
  • 2 cloves garlic , minced
  • 1 medium red onion , sliced
  • 1 medium zucchini , diced
  • 1/4 cup mushrooms
  • 1 red bell pepper , diced
  • 1 tsp dried oregano
  • 1 tbsp balsamic vinegar
  • Salt and freshly ground black pepper , to taste
  • 1/4 cup feta cheese , crumbled
  • 1 sprig rosemary

Instructions

  • Heat olive oil in a large pan over medium-high heat. Add the ground beef and cook until it starts to brown, breaking it up as it cooks. Add the garlic and cook briefly until fragrant.
  • Add the red onion, zucchini, mushrooms, and bell pepper. Cook everything together until the vegetables soften but still keep a bit of texture.
  • Season with dried oregano, salt, and pepper. Pour in the balsamic vinegar and let it reduce slightly so it coats the beef and vegetables.
  • Lower the heat and let the mixture simmer for a few minutes so the flavors come together.
  • Remove from heat, crumble feta over the top, and serve warm.

Notes

  • Brown the beef properly
    Take your time in the beginning. Good color on the beef builds the depth of flavor for the whole dish.
  • Don’t overcook the vegetables
    Keep a bit of bite in the vegetables so the stir-fry stays fresh and balanced, not soft or heavy.
  • Add feta at the end
    Always finish with feta off the heat so it softens slightly without melting completely—it keeps its texture and contrast.
