Tomato Cucumber and Onion Salad

This cucumber and tomato salad is one of those simple recipes that never gets old. Fresh, crisp, and full of bright summer flavor, it’s the perfect easy side for almost any meal.

Ingredients

  • 1 large english cucumber
  • 3 to 4 large ripe tomatoes
  • 1 medium red onion
  • 1 tbsp fresh parsley , chopped
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • sea salt and black pepper

Instructions

  • Make the salad dressing: In a small bowl, whisk together red wine vinegar, dried oregano, salt and pepper. Pour in the olive oil, while still whisking, until emulsified.
  • Prep the salad ingredients: Cut tomatoes into chunks and slice cucumbers into bite-sized pieces. Cut the red onion into thin slices.
  • Combine and assemble the salad: In a large bowl, combine the prepared ingredients. Pour the dressing over the salad and mix until combined. Before serving, add the chopped parsley, taste the salad and add salt and black pepper.

Notes

Let the salad sit before serving – Allow the salad to rest for about 10–15 minutes after tossing it with the vinaigrette. This gives the vegetables time to absorb the flavors and makes the salad taste even fresher and more balanced.
Serve it chilled – For the most refreshing texture and flavor, keep the cucumbers and tomatoes chilled before preparing the salad. It makes a big difference, especially on warm summer days.
