Ingredients

  • 1 large cucumber , peeled and quartered
  • 1/4 cup feta cheese , crumbled
  • fresh mint leaves

  • 1 tbsp extra virgin olive oil
  • 2 tbsp lime juice
  • 1 tsp honey
  • salt and black pepper

Instructions

  • Cut the watermelon into bite-sized cubes and add to a large bowl.
  • Cut the cucumber into similar-sized cubes and add to the watermelon.
  • Crumble the feta over the top and add fresh mint leaves.
