Watermelon Salsa

Ingredients

  • 2 cups watermelon
  • 1 small jalapeno pepper
  • juice of 1 lime
  • 1/2 tsp salt
  • 1/2 red onion
  • 1/4 cup fresh cilantro
  • 1/4 cup fresh mint

Instructions

  • Cut the watermelon into small, even cubes and place them in a bowl. If there is excess juice, you can gently drain a little to keep the salsa from becoming too watery.
  • Finely chop the red onion, jalapeño (remove seeds for less heat if preferred), cilantro, and mint. Keep everything quite small so it blends well with the watermelon.
  • Add the chopped ingredients to the bowl with the watermelon. Season with salt.
  • Gently mix everything together, being careful not to break down the watermelon too much. You want to keep the texture fresh and slightly chunky.
  • Taste and adjust—add more lime for brightness, salt to enhance the flavor, or a bit more jalapeño if you want extra heat.
  • Let the salsa sit for 5–10 minutes before serving so the flavors come together. Serve fresh.

Notes

  • Choose the right watermelon
Go for a ripe, sweet watermelon with good flavor—this is the base of the salsa, so if it tastes good on its own, the final result will naturally be better.
  • Cut everything evenly
Take the time to cut the watermelon into small, uniform cubes and finely chop the other ingredients. This keeps the texture balanced and ensures you get a bit of everything in each bite.
  • Season and serve at the right time
Add lime juice and salt just before serving. This keeps the salsa fresh and prevents the watermelon from releasing too much liquid, which can make it watery.
