Refreshing Cucumber Salad with Pickled Mustard Seeds

Tangy cucumber salad with pickled mustard seeds and herbs, a simple and refreshing addition to any meal.

Ingredients

  • 2 large english cucumbers
  • 1 small red onion
  • 1 sprig fresh dill
  • 1 tbsp honey
  • 1 tbsp white wine vinegar
  • 2 tbsp extra-virgin olive oil
  • Pinch of sea salt and black pepper
  • 1 tbsp pickled mustard seeds see recipe

Instructions

  • Thinly slice the cucumbers using a mandoline. Thinly slice the red onion as well.
  • Finely chop the dill and set aside.
  • In a small bowl, combine the honey, white wine vinegar, chopped dill, and extra-virgin olive oil. Season the dressing with sea salt and black pepper. 
  • In a large mixing bowl, toss the sliced cucumbers and red onions with the dressing until well coated.
  • Add dots of pickled mustard seeds on top of the cucumber salad.
  • Serve the cucumber salad chilled or at room temperature.
