How to make Refreshing Cucumber Salad

Take a look at the step-by-step photos below for a visual guide to the process. You’ll find the complete written recipe along with helpful tips in the recipe card further down the page.

Prepare the Ingredients: Wash the cucumbers, then slice them thinly using a sharp knife or mandoline for even, delicate slices. Peel and thinly slice the red onion, then add it to the cucumber for a subtle, slightly sweet bite.

Make the dressing: In a small bowl, whisk together olive oil, white wine vinegar, a pinch of salt, and freshly ground black pepper. Taste and adjust the acidity or seasoning as needed. In a large bowl, gently toss the cucumber and onion slices with the dressing until evenly coated.

Finish with the Toppings – Sprinkle the pickled mustard seeds over the salad, ensuring each bite has a pop of tangy flavor. Chop fresh dill or parsley and sprinkle over the top just before serving for brightness and color. Find the recipe for pickled mustard seeds here.

Let it rest: Allow the salad to sit for 10–15 minutes to let the flavors meld, or serve immediately for maximum crunch.

This cucumber salad with pickled mustard seeds is proof that even simple ingredients can be elevated with thoughtful touches and proper technique. Crisp, tangy, and aromatic, it’s the kind of fresh, approachable recipe I love to share with my audience.

From my Kitchen (Chef’s Notes)

  • Thin slicing is key: Using a mandoline or very sharp knife ensures even slices that absorb the dressing evenly while staying crisp.
  • Pickled mustard seeds: These can be store-bought or made at home; they add a unique texture and subtle heat that elevates the salad.
  • Balance flavors: Taste as you go—adjust the vinegar, salt, or a pinch of sugar to find the perfect balance between tangy, sweet, and savory.
  • Serving suggestions: This salad pairs beautifully with grilled meats, smoked fish, sandwiches, or as a bright side on any plate.
  • Make ahead: You can prepare this salad a few hours in advance; the cucumbers may soften slightly but will still retain plenty of crunch and flavor.

Variations & Substitutions

  • You can swap pickled mustard seeds with capers or finely chopped pickles for a similar tangy bite.
  • Add fresh herbs like dill, parsley, or mint to bring a different aromatic note to the salad.
  • For a slightly sweeter profile, balance the acidity with a small drizzle of honey or maple syrup.
  • If you prefer more depth, add thinly sliced red onions or shallots for a mild sharpness.
  • Replace vinegar with lemon juice for a brighter, fresher acidity.
  • You can also add a touch of yogurt for a creamier variation while keeping it light.

How to Store

  • Store in an airtight container in the refrigerator for up to 1–2 days.
  • Keep in mind that cucumbers release water over time, so the texture will soften slightly.
  • If possible, store the dressing separately and combine just before serving for maximum freshness.
  • Give it a quick toss before serving to redistribute the flavors.

FAQ

How do you keep cucumber salad from getting watery?

Lightly salt the cucumbers and let them sit for a few minutes, then drain off excess liquid before dressing. This helps maintain a crisp texture and prevents the salad from becoming diluted.

Can I make this cucumber salad ahead of time?

Yes, but for the best texture, it’s ideal to prepare it shortly before serving. If making ahead, keep the dressing separate and combine just before serving.

What type of cucumber works best for this salad?

Thin-skinned varieties like English or Persian cucumbers work best because they are less watery and have fewer seeds, giving a cleaner, crisper result.
