If you’re looking for a quick comfort food fix, these garlic parmesan fries are one of my go-to air fryer recipes. They’re made from simple french fries in the air fryer until perfectly crispy, then tossed with garlic, parmesan, and herbs for that addictive flavor.

I usually lean toward lighter sides like salads or grilled vegetables when I cook, but there are moments when nothing beats that craving for something salty and crispy.

These fries give you exactly that. They come out golden and crisp on the outside, soft in the middle, and finished with just the right amount of parmesan and garlic. What I really like about making French fries in the air fryer is how much healthier it is compared to deep frying. For me, it’s the perfect balance: all the comfort of classic fries, but a much lighter, easier way to enjoy them at home!

Why use an air fryer for French fries?

They are done in no time, with very little effort, and I love that they feel lighter compared to deep frying in a lot of oil. Tips for Using an Air Fryer

Preheating – For this recipe, I usually don’t bother preheating the air fryer. It saves time and the fries still turn out perfectly crispy.

Different Air Fryer Styles – Both basket-style and oven-style air fryers work well here. I personally prefer the basket-style because it’s easier to shake the fries while cooking. Just keep in mind that oven-style air fryers often cook a little hotter, so you may need to lower the temperature slightly.

Don’t Overcrowd – Try not to pack too many fries into the basket at once. Giving them a bit of space helps them crisp up evenly instead of steaming.

Keep an Eye on Them – Air fryers cook surprisingly fast, and every model is a little different. I always check the fries a little early and adjust the timing if needed.

Key Ingredients

Here’s everything you’ll need to make these crispy garlic parmesan air fryer fries at home:

Potatoes – For these air fryer fries, I use russet potatoes, but you can also use Yukon Gold potatoes, which give a softer center. Russet potatoes have the classic, rich flavor everyone loves. Peel the potatoes or leave the peel on – just make sure to wash them properly.

Garlic – Fresh garlic is best here. I like to finely mince it so it coats the fries evenly and gives that deep, aromatic flavor once it hits the warm fries. You can also use garlic powder if you want a milder, more even seasoning.

Parmesan Cheese – Freshly grated parmesan makes all the difference. It melts slightly over the hot fries and adds that salty, nutty finish that really brings everything together.

Olive Oil – Use a good quality olive oil. You can use vegetable oil, canola oil, or any neutral oil.

Butter – A little melted butter at the end makes the fries feel extra indulgent. I usually toss it with the garlic so the flavor spreads evenly through every bite.

Fresh Parsley – Fresh parsley adds a bright, fresh finish that balances the richness of the parmesan and butter.

How to make Air Fryer Garlic Parmesan Fries

Prepare the potatoes – You can peel the potatoes if you like, but I personally love leaving the skin on because it adds extra texture and flavor. Slice the potatoes lengthwise into thin planks about 1/4-inch thick, then stack a couple of slices and cut them again into thin fry-shaped sticks. Try to keep them roughly the same size so they cook evenly in the air fryer (Photos 1 & 2).

Soak the potatoes – Transfer the sticks to a bowl filled with ice water and let them soak for 30 minutes. This step is really important because it helps remove excess starch from the potatoes, which gives you crispier French fries in the air fryer. Drain the ice water and rinse the sticks to get rid of any excess starch (Photos 3 & 4).

Pre-cooking – To get that perfect crispy outside and fluffy center, I like to pre-cook the fries first. Preheat your air fryer to 320°F (160°C). Drain the potatoes well and pat them completely dry with a kitchen towel, then air fry them for about 10–12 minutes until slightly softened but not browned yet. This extra step makes a huge difference in the final texture.

Freeze the Fries – Transfer the pre-cooked fries to a tray and place them in the freezer for about 30 minutes, or until completely cold. This helps the fries become extra crispy during the final cook (Photos 5 & 6).

Air Fry Until Crispy – Increase the air fryer temperature to 365°F (185°C) and cook the fries for another 10–15 minutes until golden and crispy. Shake the basket a few times while cooking so they crisp evenly on all sides.

Prepare the Garlic Butter – Meanwhile, combine the butter and garlic in a small bowl and microwave until melted. Set aside (Photos 7 & 8).

Finish and Serve – Transfer the hot fries to a large bowl and toss with the garlic butter mixture until evenly coated. Add the grated parmesan and mix again. Transfer to a plate and finish with freshly chopped parsley before serving (Photos 9 & 10).

How to Serve Air Fryer Garlic Parmesan Fries

Honestly, I could eat these air fryer garlic parmesan fries straight from the bowl while they’re still hot and crispy. They make such a good snack or appetizer on their own, especially with the garlic and parmesan topping.

And of course, fries are always better with a good sauce. I usually go for classic ketchup, but they’re also so good with chipotle sauce, chimichurri, or garlic mayo.

Shake the basket while cooking — Don’t forget to shake the air fryer basket a few times during cooking. It helps the fries cook evenly and get crispy on all sides. One thing I love about air fryers is that you can easily open them to check and toss everything halfway through cooking.

Ingredients
  

  • 2 russet potatoes , scrubbed
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp butter
  • 4 cloves garlic , minced
  • 2 tbsp parmesan cheese , grated

Method

  5. Increase the air fryer temperature to 365°F (185°C) and cook the fries for another 10–15 minutes until golden and crispy. Shake the basket a few times during cooking so the fries crisp evenly on all sides.
  6. Meanwhile, combine the butter and garlic in a small bowl and microwave until melted. Set aside.
  7. Transfer the hot, crispy fries to a large bowl and immediately toss with the garlic butter mixture until evenly coated.
  8. Add the grated parmesan and toss again so it melts slightly over the warm fries.
  9. Transfer to a serving plate and finish with freshly chopped parsley. Serve immediately while hot and crispy.

Notes

  • Use russet potatoes – They give the best classic fry texture with a crispy outside and fluffy inside. Leaving the skin on adds extra flavor and crunch.
  • Dry the potatoes well – After soaking, make sure the fries are completely dry. Any moisture will stop them from getting crispy.
  • Don’t skip shaking – Shake the air fryer basket a few times while cooking so the fries brown evenly on all sides.
  • Work in batches if needed – Avoid overcrowding the basket so the hot air can circulate properly.
