Every year when tomato season peaks, my kitchen counter looks like a vibrant red mosaic. Usually, that means we are eating a classic Italian caprese salad every single day. But this year, I wanted to shake things up. By slicing up a fresh globe eggplant, brushing it with olive oil, and grilling it until it gets those beautiful char marks and a melt-in-your-mouth texture, you get a smoky, savory depth that pairs beautifully with sweet tomatoes and milky mozzarella. This eggplant caprese salad is the ultimate crowd-pleasing summer salad. It makes for a gorgeous, colorful side dish at backyard barbecues, but it functions just as well as a quick salad for a lazy Tuesday night. If you’ve been searching for new eggplant recipes to try, or just want to add some fresh Italian recipes to your weekly rotation, this smoky twist on a classic is bound to steal the show.

Why this Recipe works

Perfect Contrast: Grilling the eggplant gives it a tender texture with smoky charred edges that perfectly contrast the firm, juicy tomatoes and creamy mozzarella.

Elevated Classic: It takes the familiar flavors of a traditional Caprese salad and elevates them with a warm depth that makes the dish feel like a special occasion.

Effortless yet Impressive: It requires minimal prep and only a few minutes on the grill, giving you a stunning, crowd-pleasing side dish or quick lunch with very little effort.

Key Ingredients

Here is what you’ll need to grab at the farmer’s market:

Eggplant – Look for a firm, shiny globe eggplant – it works beautifully for this recipe. You don’t need to peel the eggplant, as the skin is edible.

Tomatoes – Any tomato would work for this recipe, but my favorite is ripe heirloom tomatoes. Just be sure to slice them to a similar thickness as your eggplant to ensure perfect, balanced layers in every bite.

Olive Oil – Use a high-quality extra virgin olive oil to brush the eggplant before grilling.

Fresh Mozzarella – Fresh, sliced mozzarella cheese pairs beautifully with ripe tomatoes and grilled eggplant in a summer Caprese salad.

Fresh Basil – Fresh Italian Basil over the top adds a bright pop of green and a beautiful, rustic touch to the finished dish.

Balsamic Glaze – Drizzled over the top to perfectly balance the savory, smoky grilled eggplant.

Oregano – A pinch of dried oregano adds a warm, earthy depth.

Balsamic Vinegar – A splash of high-quality balsamic vinegar adds a bright, tart acidity that perfectly cuts through the richness of the cheese.

Ingredients needed to make Eggplant Caprese

How to make Eggplant Caprese Salad

Preheat the Grill: Fire up your grill to medium-high heat, aiming for about 400°F.

Prep the Eggplant: Slice the eggplant into ½-inch thick rounds. Arrange the slices in a single layer, sprinkle both sides generously with salt, and let them rest for 20–30 minutes to draw out excess moisture. Pat the eggplant dry with paper towels, then arrange them in a single layer on a baking sheet.

Prepare the Marinade: Combine the olive oil, balsamic vinegar, minced garlic, salt, and pepper directly in a bowl, whisking until well blended.

Marinate the Eggplant: Lay the eggplant slices in a shallow tray or dish, then pour the marinade evenly over them to coat both sides. Let them sit for 5 to 10 minutes, then transfer the slices to a platter, shaking off any excess marinade before grilling.

Grill the Eggplant: Arrange the eggplant slices directly on the hot grill grate and cook for 4 to 5 minutes until they are lightly golden brown. Flip them over with a spatula and grill for another 2 to 3 minutes until tender.

Assemble the Salad: On a large plate or serving platter, layer the warm grilled eggplant slices, heirloom tomato rounds, and mozzarella, finishing with basil leaves.

Season and Drizzle: Finish the salad with a drizzle of olive oil and balsamic vinegar, then sprinkle with a pinch of salt and pepper.

From my Kitchen (Chefs Notes)

Prevent Sticking: Eggplant acts like a sponge and will soak up oil quickly. Make sure your grill grates are clean and lightly oiled right before laying the slices down to prevent them from sticking or tearing.

Slice for Success: Try to slice your eggplant, tomatoes, and mozzarella to a uniform thickness (about ½-inch). Consistent sizing makes the salad look stunningly professional when layered and ensures a perfect ratio of flavors in every single forkful.

Serve Warm or Room Temp: While you can serve this salad immediately while the eggplant is warm, letting it sit at room temperature for 10–15 minutes allows the mozzarella to soften slightly from the gentle heat of the eggplant, making it extra creamy.
